Potatoes Au Gratin

Ingredients:

3 Tablespoons butter or margarine
2 Tablespoons flour
1 teaspoon salt
1/8 teaspoon pepper
3 cups milk
1 cup Velveeta
2 Tablespoons onion, chopped
6 medium potatoes, peeled and thinly sliced (6 cups)

Directions:

Melt butter in sauce pan over medium heat. Add flour, salt and pepper. Stir until smooth, then slowly add heated milk, stirring constantly until thickened. Remove from heat and stir in cheese. Continue to stir until cheese is melted.

Place one half of the potatoes in the bottom of a greased 2-quart casserole dish. Cover with one half of the onion and one half of the sauce. Repeat ending with sauce. Cover with foil and bake for 1 hour in a 350 degree oven. Uncover and bake 30 minutes longer.
