Seafood Corn Chowder

Ingredients:

1 pound shrimp (crab meat, crawfish tails, lobster meat, or combination of seafood)
1 large onion, chopped
1 can Rotel tomatoes and chilies
1 can diced tomatoes
2 cans cream style corn
1 can evaporated milk
1 cup milk
1 - 8 oz. package cream cheese
1/2 stick of margarine or butter
1 teaspoon red pepper
1 teaspoon black pepper
1 teaspoon salt

Directions:

Melt margarine in a large kettle. Saute onions until clear. Add shrimp and cook until pink. Add Rotel, cream cheese, and tomatoes and allow the cheese to melt without boiling. Add corn, milk, and seasonings and simmer for 10 minutes. If the shrimp is already cooked, add it with the milk to avoid overcooking.
