Pasta Fagioli

Ingredients:

2 or 3 slices of bacon, cut into small pieces
1 carrot, finely chopped
3 stalks celery, sliced
1 onion, chopped
1 clove chpped garlic
1/4 teaspoon rosemary
1/4 teaspoon thyme
1 bay leaf
2 cans cannellini beans (white kidney beans)
2 cans chicken stock
1 can tomato sauce
1 1/2 cups macaroni
Parmesan cheese

Directions:

Heat a large pan and drizzle with olive oil. Add chopped bacon, vegetables and herbs. Stir and season with salt and pepper. After bacon begins to brown, stir in garlic. Add beans, chicken stock and 2 cups water. Stir in tomato sauce and bring to a boil. Simmer about 20 minutes until vegetables are tender. Add macaroni and return to a boil. Allow to boil 6-8 minutes until macaroni is done. Serve with fresh Parmesan cheese sprinkled on top and lots of french bread to soak up the broth.
