Blender Hollandaise Sauce

Ingredients:

1 stick butter
3 egg yolks
2 Tablespoons lemon juice
1/4 teaspoon salt
Pinch cayenne

Directions:

In a small saucepan heat the butter to bubbling but do not let it brown. Into a blender container put the egg yolks, lemon juice, salt, and cayenne. Cover container and turn motor on low speed. Immediately remove cover and pour in the hot butter in a slow, steady stream. When all the butter is added, turn off the motor. Makes 3/4 cup or about four servings.
