Mexican Rice

Ingredients:

1 1/2 cups rice
3 cups water
1/2 teaspoon salt
1 pound Monterey Jack cheese (grated)
2 cups sour cream
1 small can green chilies, chopped

Directions:

Stir rice and salt into water and bring to a boil. Cover and simmer for 12 minutes without lifting the lid. Stir in cheese, sour cream, and chilies until cheese is melted. Serves 6.
