Mom's refrigerator cookies were a favorite of our family. Providing after school snacks for eleven children (twelve counting Dad) was a full-time job. Mom could make these ahead and then bake them when she had time. We were especially fond of them made with hickory nuts picked up by us kids when we lived in Southern Illinois. After moving to Idaho, Mom had to use store bought nuts, so we didn't get to enjoy these cookies except around Christmas time. They are great with any kind of nut and bring back lots of memories at our house.

Mom had her own way of writing down recipes, and I have kept this just the way she wrote it.

Mom's Refrigerator Cookies

Ingredients:

Wet ingredients:
½ c. Crisco
½ t. salt
½ c. brown sugar
½ c. sugar
1 egg

Dry ingredients:
½ c. nuts
1 ½ c. flour, sifted
¼ t. soda

Directions:

Blend wet ingredients, add dry ingredients and blend well. Roll into log shape; cover with wax paper and chill overnight. Cut/slice place onto litely greased pan and bake @375 12-15 minutes.
