Sugar Free Key Lime Pie

Ingredients:

1 Graham cracker crust (also tastes great with Keebler crust made from Oreo's)
1 Envelope unflavored gelatin
1 1/2 cup skim milk
8 oz. pkg. cream cheese, softened
1/3 cup to 1/2 cup fresh lime juice
1/2 cup Splenda sweetener
1 tsp. vanilla
Lime slices (optional)
Mint sprigs (optional)

Directions:

Sprinkle gelatin over 1/2 cup of the milk in a small saucepan. Let stand for 2 to 3 minutes. Cook over low heat, stirring constantly, until gelatin is dissolved and set aside to cool while preparing cream cheese.

Dissolve Splenda in remaining milk and add vanilla. Beat cream cheese in small bowl until fluffy. Beat in milk, gelatin mixture, and lime juice. Pour into crust and chill until filling is set, about 2 hours.

To serve: Cut in small slices and garnish with Cool Whip and lime slices and mint springs.
Serves 8
