For a long time we tried to barbeque ribs by placing them on the grill and adding wood chips to the fire. Didn't work. Then we tried par boiling the ribs. This worked, but the taste wasn't all that great. Several years ago we purchased a small smoker from Sears. It came with some simple directions and recommended times for smoking beef, pork, chicken and fish. Since we have started using this smoker, we have not had a single failure. Every single thing we have smoked, has turned out perfect.

Here is our easy step by step method to great BBQ ribs.

  1. Apply a generous amount of rib rub to a side of pork or beef ribs. You may use a commercial rub, or you can use Lydell's recipe. Click here for Lydell's recipe. It's even more fun to make your own. Cover and place in the refrigerator for at least one to two hours before cooking.
  2. Fill the smoker pan with good quality charcoal.
  3. Soak wood chips in water and rap them in aluminum foil. Poke holes in the foil for the smoke to exit. We like apple wood the best. However you may prefer mesquite, or hickory.
  4. Place the wood chip package on the coals.
  5. Fill water pan with cool water.
  6. place ribs on grill. The smoker comes with two grills. You may place your meat on both. If I only have enough meat for one grill I use the bottom one.
  7. After the meat is on the grills, place the upper unit on top of the coals.
  8. You will usually have to add more coals after about 3 hours.
  9. This is easily accomplished by setting the upper unit aside. This way you will not get ashes on your meat.
  10. After smoking the ribs for 5-6 hours, place the meat on your grill for 15 minutes. generously brush your favorite rib sauce on both sides. We like a sweet spicy sauce. Click here for the recipe.
  11. After removing the ribs from the grill, let them cool for about 10 to 15 minutes. Then serve.
