Fresh salsa can be made with any number of ingredients. This is one of our family's favorites.

Mexican Fresh Salsa

Ingredients:

4 ripe Roma tomatoes
1/4 onion
2 jalapeno
8 cilantro sprigs
3 garlic cloves
Juice of 1 lime
1/4 cup olive oil
1/2 teaspoon salt

Directions:

Remove the seeds, stem, and white membrane from the jalapenos. The heat is in the seeds and membrane, so if you like your salsa very hot leave those in the mix. Place the jalapenos in a food processor. Cut the remaining vegetables into coarse pieces and add them to the processor. Sprinkle with salt and add the olive oil and lime. Cover and pulse until the salsa is the texture you prefer. Chill and let stand at least 15 minutes before serving.

If you do not have a food processor, chop the vegetables, cilantro, and garlic very fine. Stir in the lime juice, olive oil, and salt. Mix thoroughly and chill for 15 minutes before serving.
