Venison Roast

Ingredients:

3-5 pound roast
3 strips bacon
3 tablespoons flour
1 cup red wine
1/2 cup sour cream
1 can mushrooms
Buttermilk Marinade

Directions:

Place roast in stone container and cover completely with Buttermilk Marinade. Cover and set in refrigerator overnight. When ready to use, remove roast from marinade and dry with paper towels. Season with salt and pepper and brown on all sides in butter.

Place in roaster and cover with bacon strips. Roast in 350 degree oven until tender (1 to 1 1/2 hours.) Remove meat and place on cutting board. Stir flour into drippings until brown and thickened. Add wine, sour cream, and mushrooms and simmer for 5 minutes. Add sliced roast to the gravy and keep warm. Serve over buttered noodles.
