Mom's Elk Steak Goulash

Mom created this recipe when we were living in Idaho. She used a lot of vegetables to help cover up the taste of the wild meat. She named it "goulash" because it was a mixture of whatever she had on hand.

Ingredients:

1 pound Elk steaks (or beef round steak cut into serving sizes)
1 small onion, sliced
1 can green beans
1 can diced tomatoes
flour
salt
pepper

Directions:

Season steaks with salt and pepper and coat with flour. Fry meat in hot oil until brown on both sides. Add onions and cook until onions are transparent. Drain off excess oil, and add green beans (undrained) and tomatoes. Simmer covered for about an hour adding water to keep from burning. If it is not thick enough, mix 2 tablespoons of flour in a half cup of water and slowly add while stirring until gravy is the desired thickness. Serve with mashed potatoes.
