Deep Fry Fish Batter

Ingredients:

3 cups oil
1 1/3 cups flour
1 1/2 tsp. baking powder
2 tsp. salt
1 egg
1 cup water
2 tsp. sugar

Directions:

Heat oil in deep fat fryer to 425 degrees. Mix remaining ingredients until smooth. Mixture should be thin enough to run off the spoon. Dip fish fillets in batter and shake off any excess. Drop in heated oil and cook until golden brown (approximately 5 minutes). This makes enough batter for 2 pounds of fish fillets. Serve with homemade tartar sauce.
