Salmon Croquettes

Ingredients:

1 can salmon
1 teaspoon finely chopped onion
1/4 sleeve saltine crackers, finely crushed
1/4 cup flour
1/8 teaspoon salt
1/8 teaspoon black pepper
1 egg, beaten with a fork
1/2 cup cooking oil

Directions:

Drain the salmon and remove the larger bones. Mix with onion, crackers, flour, salt, pepper, and egg. Heat cooking oil in a large skillet. Shape salmon into patties the size of a small hamburger. Fry in hot oil about 3 minutes per side. Turn carefully to avoid breaking up the patties. Makes 5 small patties.
