Pumpkin Roll

Ingredients:

2/3 c. pumpkin
3 eggs
1 c. sugar
1 tsp. lemon juice
2/3 c. flour
1 t. baking powder
2 t. cinnamon
½ t. nutmeg
½ t. salt

Directions:

Beat eggs 5 minutes adding sugar slowly while beating and 1 t. lemon juice, then pumpkin. Mix well then add flour, b. powder, salt and spices. Mix well, pour into well greased and floured cookie sheet. Bake 20 minutes @375. Let cool completely and loosen with spatula the bottom and edges.

Filling:
8 oz. package cream cheese
4 T. oleo
1 c. powder sugar
½ t. vanilla
½ c. nuts, chopped.

Whip together - spread evenly over cooled cake. Roll up cake jelly roll fashion. Sprinkle with powder sugar. Chill.
