Creme de Menthe Brownies

Ingredients:

Brownie Layer:
3 squares unsweetened chocolate, melted
2 cups brown sugar
3 eggs, added one at a time
2/3 cup vegetable oil
1 teaspoon vanilla
1 1/4 cups flour
1/2 teaspoon soda

Creme de Menthe Layer:
4 cups powdered sugar
1/2 teaspoon peppermint
2 Tablespoons milk
green food coloring
2 sticks margarine
1 1/2 ounces creme de menthe ice cream topping

Frosting:
12 ounces chocolate chips
4 Tablespoons vegetable oil

Directions:

Mix ingredients for brownie layer and spread in a 9X13 greased baking pan. Bake at 350 degrees for 15 minutes. Set aside to cool.

Meanwhile, mix ingredients for Creme de Menthe layer and beat until smooth. Spread over completely cooled brownie layer and set in refrigerator until hard.

Melt chocolate chips with vegetable oil for frosting, cool slightly, and spread over top of Creme de Menthe layer and chill. Cut before frosting sets completely. Store in refrigerator.
