Mint Brownies

Ingredients:

1 cup (2 sticks) butter or margarine
2 cups sugar
2 teaspoons vanilla extract
4 eggs
1 cup all-purpose flour
3/4 cup Hershey's Cocoa
1/2 teaspoon baking powder
1/4 teaspoon salt
2 cups confectioners' sugar
1/2 cup butter, softened
1 tablespoon mint flavoring
3 drops green food color
6 tablespoons butter
1 cup semisweet chocolate chips

Directions:

Preheat oven to 350°. Grease bottom of 13x9x2 inch baking pan.

Microwave 2 sticks of butter or margarine in a large bowl until melted. Stir in sugar and vanilla. Add eggs one at a time, beating well with a spoon after each addition. Add flour, Cocoa, baking powder and salt; beat until well blended. Pour into baking pan and bake for 25-30 minutes or until brownies begin to pull away from sides of the pan. Cool completely.

In a small bowl, beat the confectioners' sugar, 1/2 cup butter or margarine, mint flavoring, and green food color until smooth. Spread evenly over the cooled brownies, then chill until set.

In a small bowl over simmering water, or in the microwave, melt the remaining 6 tablespoons of butter and the chocolate chips, stirring occasionally until smooth. Allow to cool slightly, then spread over the top of the mint layer. Cover, and chill for at least 1 hour before cutting into squares. Makes about 36 brownies.
