Now that summer is here and gardens are beginning to produce it is time to dig out the zucchini recipes. This Chocolate Chip Zucchini Bread recipe tastes like a moist chocolate cake and can be served with a dollop of whipping cream for a great dessert.

Chocolate Chip Zucchini Bread

Ingredients:

1/2 cup shortening
1/2 cup vegetable oil
1 3/4 cup sugar
2 eggs
1 teaspoon vanilla
1/2 cup buttermilk
2 1/2 cups flour
1 teaspoon baking soda
4 Tablespoons cocoa powder
1/2 teaspoon cinnamon
2 cups raw, grated zucchini
1/2 cup chopped nuts
1/2 cup chocolate chips

Directions:

Cream together shortening, oil, and sugar. Blend in eggs vanilla and buttermilk. Sift together flour, baking soda, cocoa and cinnamon. Add to egg mixture then stir in zucchini. Pour into two greased loaf pans. Top with nuts and chocolate chips.

Bake at 325° for 45 minutes.
