Zucchini Beef Casserole

Ingredients:

medium zucchini (or 1 big one)
1 cup cracker crumbs
1/2 onion chopped
1 can cream of chicken soup
1 small green pepper, chopped
parmesan cheese
salt and pepper
1/2 lb. ground beef

Directions:

Slice zucchini thin into oiled 2-quart casserole. Add chopped onion and green pepper. Season lightly with salt and pepper. Sprinkle cracker crumbs on top and pour thick soup from can over a11. Sprinkle with parmesan cheese and bake 45 min, at 325 degrees. Meanwhile brown ground beef, drain off fat, and season with salt and pepper. Sprinkle baked casserole with beef and return to oven for 15 minutes.
