My family's favorite vegetable has to be broccoli. That is besides corn. I can serve it so many different ways and they love it.

Broccoli, Ham, and Cheese Casserole

Ingredients:

2 pounds fresh broccoli, trimmed and cut up
2 tablespoons butter
1/4 cup celery, chopped
1/4 pound fresh mushrooms, sliced
1/4 cup onion, chopped
1 can sliced water chestnuts, drained
1 can cream of broccoli soup
1/2 pound Velveeta, softened
1/2 teaspoon garlic salt
1/4 teaspoon pepper
1 cup grated Cheddar cheese
2 cups diced ham

Directions:

Preheat oven to 350° and spray a 9 by 13 inch casserole with Pam. Steam broccoli until tender, about 10 minutes.

Melt the butter in a medium skillet over medium heat and saute the celery, mushrooms, and onion until softened. Combine the broccoli and the cooked vegetables in a bowl. Add the drained chestnuts and chopped ham.

Heat the soup and softened Velveeta over low heat until the cheese melts. Pour it over the broccoli mixture. Add the garlic salt and pepper and mix thoroughly.

Pour the mixture into the casserole dish and bake for 20 to 25 minutes. Sprinkle the top with the grated Cheddar cheese the last 5 minutes of baking.
