Zucchini is used in a lot of sweet recipes but this is a savory dish that can be cut small and served as an appetizer or with more generous pieces for a light lunch.

Zucchini Strudel

Ingredients:

1 cup shredded zucchini
1/4 cup chopped green onion
1 cup green peas
1 egg
1 cup cottage cheese
2 Tablespoons chopped fresh dill
Strudel dough

Directions:

Saute zucchini, onions, and peas until tender. Set aside to cool. Roll out strudel dough.

Mix egg, cottage cheese, and dill. Add to cooked vegetables. Spread dough with melted margarine. Sprinkle vegetables over the dough and roll up like a jelly roll. Brush top with melted butter and twist roll in a circle and place on a cookie sheet. Bake at 400° for 30 minutes then lower the temperature to 350° and bake 30 minutes more or until golden brown.
