These Zucchini Cookies are spicy and a good way to use some of the zucchini abundance. They are moist and children don't have to know they are eating a vegetable.

Zucchini Cookies

Ingredients:

1/2 cup (1 stick) margarine
1 cup sugar
1 egg
1 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
1/2 teaspoon ground cloves
1/2 teaspoon cinnamon
1/2 teaspoon salt
1 cup raisins
1/2 cup chopped nuts
1 cup grated zucchini

Directions:

Cream together margarine and sugar. Beat in egg and vanilla. Stir in remaining ingredients. Drop by teaspoonful on ungreased cookie sheet. Bake at 350° for 10-12 minutes until lightly browned. Do not overbake.
