Gardens produce a lot of zucchini and one of the ways to use them up is by making zucchini bread and freezing it. This traditional recipe was given to me by my mother-in-law and is one of our favorite ways to use up zucchini.

Zucchini Bread

Ingredients:

3 eggs
2 cups sugar
1 cup vegetable oil
2 1/2 cups grated zucchini
1 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
2 teaspoons vanilla
1 cup chopped nuts
1 cup raisins
2 1/4 cups flour
2 teaspoons baking soda

Directions:

Cream together eggs, sugar, oil, and vanilla. Add zucchini, raisins and nuts. Sift together flour, cinnamon, nutmeg, and baking soda. Add to egg mixture and beat together for three minutes. Grease and flour three loaf pans.. Fill each pan 1/2 full and bake 55 minutes in a 350° oven. Bread is done when a toothpick inserted in the middle comes out clean.
